Foodtech ‑ fermentation of forest materials for future food
In this research project we aim to study fermentation of forest residues for future food and feed.
The overall goal of the project is to develop and strengthen regional entrepreneurship, primarily in the area of Foodtech, through research that focuses on new products and processes that may become alternatives or complement to existing ones. This means that the project produces appropriate composition for production fish feed, chicken feed, meat replacement and reindeer feed.
The long-term goal of the project is to develop and strengthen regional entrepreneurship, primarily in the area of Foodtech, through research aimed at new products and processes that can become alternatives or complements to existing ones. The goal is also to help build a strong research environment within Foodtech at Mid Sweden University.
The basis for the project is to utilize the expertise in the area of fermentation of renewable and fossil-free residual material from the forest and utilize the results in the region. The collaboration between Mid Sweden University and stakeholders such as Peckas Tomatoes, SCA Ortviken, Biocompost, Colabitoil, Labservice, Nattviken Invest, Hushållningssällskapet and the Municipality of Härnösand further strengthen the project.
According to the UN Climate Panel IPCC, the next 10 years are crucial to avoid catastrophic climate effects. Meat production, together with fossil-fueled transport of goods and people, is highlighted as two of the major challenges in reducing greenhouse gas emissions. Globally, meat production and transport together account for just over 28% of the world's greenhouse gas emissions. The project therefore directly supports the development of the UN Global Objective 13, Combating Climate Change, with indicators to monitor the impact of meat production as well as the UN climate target to meet the 1.5-degree mill by 2030.
